- 1 ½ Cup of all-purpose flour
- ¾ cup of oat flour
- 1 tsp of cinnamon powder
- ½ tsp of salt
- ½ cup of raisins ( or more )

Step 1. Let’s start to warm up the milk. Once the milk is warm, then remove it from the heat. Take a large mixing bowl, and put milk, maple syrup or sugar (1 tablespoon) in it. Then sprinkle the yeast and mix well. After mixing these ingredients, sit the mixture for a few minutes.
Step 2. Take another bowl for dry ingredients. Put 1 ½ cups of all-purpose flour ( you can use bread flour or oat flour), ½ tsp of salt, 1 tsp of cinnamon powder, and two spoons of active yeast and give them a quick mix.
Step 3. When you see your milk is too frothy and bubbly, add it to the flour mixture and 2 tablespoons of vegetable oil. Mix it with a spatula until the flour is moistened. Now use your hands for mixing (in starting the dough may be sticky).
Step 4. Sprinkle of flour on your work surface. Put the kneaded dough on it and leave for 5 minutes. It’s time to add raisins, stretch the dough, sprinkle the fresh raisin on it, and enclose it to form a ball.
Step 5. Knead to mix the dough for 2 to 3 minutes to mix the raisin in the dough evenly. After mixing this dough, keep it in a warm place for 2 to 3 hours. Put it on a lightly floured surface when it becomes double or triple in size.
Step 6. Take a roller and start to roll the dough until it becomes 2cm thick. Cut out the muffins with a round cookies cutter. Put them into a tray one by one and leave them for an hour to rise (cover them with a towel).
